Growing up in Alberta with a love for fast food, I was accustomed to classic French fries, but as an
adult, I sought something more satisfying. That's when, as a young adolescent, I stumbled upon the
delightful combination of crispy potatoes with savory sauce at a local French fry shop. This upgrade
transformed the ordinary fry into a rich, comforting dish. The creamy sauce added a depth of flavor
that elevated these golden sticks from a simple side to a hearty treat. I had to asked myself, “Does
it get any better than this?”. With numerous variations, this duo offers a new culinary adventure
beyond the typical ketchup. It’s a delicious twist that enhances any meal and satisfies any craving.

As proud Canadians serving this lovely pairing, we always strive to uphold its strong
cultural roots. At some point around the 1950s, a genius person thought of something
ingenious. The combination of crispy potato fries and rich gravy but upgraded with the
addition of fresh cheese curds. The hot gravy melting the cheese curds created a magical
melt of flavours. While this comforting pairing is enjoyed worldwide, poutine holds a
special place in Canadian culture. From food courts to fancy restaurants, it seems like
wherever restaurant I go to, I can find this dish everywhere, and that is something we as
Canadians can feel proud of.

cultural melting pot of which is Canada, I often come upon different variations from
different cultures of this awesome combination. Alongside the Canadian poutine, I’ve had the
privilege of tasting unique styles of this dish like, chips and gravy from the United
Kingdom, chili cheese poutine from the United States, and Mexican style poutine from Mexico
which often contains toppings from a taco! Having been able to travel around to cities in
Europe and Asia, this exceptional dish was one I saw most commonly, with many people clearly
delighted with this snack!

As long as I can remember, fries and gravy have long been a classic comfort food. It is easy to make
and hard to resist. I, along with many, have the preparation memorized like an instinct. Leading the
way are the crispy fries. Golden and crunchy on the outside while staying soft inside. The second in
command is the hot, rich, and savory gravy. Usually made from beef drippings and broth, this mixture
is carefully reduced to create something amazing. This tasty combo has become a favorite in many
places around the world, offering a warm and satisfying meal that people love!
